The HiFri (High Tech Frying) prepare fries and snacks in a similar process and duration as in a traditional deep-fry with the difference that the oil (means for heat transfer) are replaced by a combination of hot air and steam.
The products which are prepared in the HiFri, score on crunchiness, structure and taste, to products which are fried in a traditional deeping-fry system.
